Recipe: Pineapple pie, ananaspiirakka

The following recipe is basically a pineapple version of super popular apple pie recipe that can be found on Finnish site Kotikokki. Be sure to try the original apple pie recipe published by user pohjanka, you'll love it.





Ingredients



  • 200 g liquid margarine
  • 120 g sugar
  • 200 g flour
  • 1 egg
  • 0,75 dl / 0,26 cup [UK] / 0,31 cup [US] fat-free milk
  • 1 tsp baking powder
  • 1 tsp vanilla sugar
  • 2 small cans of pineapple chunks (~280 g)





Instructions



Start by mixing margarine and sugar in a bowl. Personally I use Finnish product "Valio Oivariini liquid", a mixture of butter and turnip rape oil. Healthier option and great for cooking.



Slowly add flour while mixing. After adding flour to the mixture, take some of it (around a cup) and put it aside for later use.





Now it's time to add an egg, milk, baking powder and vanilla sugar. Mix it strongly until it's smooth.





Pour the pastry into a greased pie dish.





Next we have the pineapple part of the recipe. Place them as you like. For the pie two little cans are enough. In the photo below, the pie doesn't have two full cans (since I had to eat a few chunks, could not resist) but almost. 




Sprinkle the remaining pastry on the top of pineapple chunks. You can add a bit of sugar too if you like. Despite having very sweet pineapple on these, a little amount of sugar on the top of it was alright.






Bake at 200 ℃ (400 ℉) for around 30 minutes.
